  • 1 cup (230g) unsalted butter (softened)
  • 3 and 1/2 cups (450g) powdered sugar
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1/4 cup (60ml) milk (add more if needed)

Instructions:

  1. Preheat oven to 180°C (350°F). Grease and flour two 9-inch round cake pans.
  2. Mix dry ingredients: In a large bowl, sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add wet ingredients: Add eggs, milk, oil, and vanilla. Beat on medium speed until well combined.
  4. Add boiling water: Slowly mix in the boiling water (the batter will be thin – that’s okay!).
  5. Bake: Divide batter between the pans and bake for 30–35 minutes or until a toothpick comes out clean.
  6. Cool: Let cakes cool in pans for 10 minutes, then remove and place on a wire rack to cool completely.

Frosting (optional but delicious!):

  1. Beat butter until creamy.
  2. Add powdered sugar, cocoa powder, salt, and vanilla.
